A meringue is simply a mixture of beaten egg whites whipped with sugar until the volume increases and peaks form. Egg whites have a superb capacity to foam; as long as certain precautions are taken (see the sidebar opposite), they can increase in volume by up to eight times.
Even if you don’t recognize them in the mixer bowl, over-beaten egg whites become tauntingly obvious when you fold them. Instead of blending into the batter, over-whipped whites form stubborn, dry clumps.
To beat means to rapidly stir a batter to thoroughly incorporate the ingredients along with air.
Some recipes call for a light beaten egg. Use a fork to beat the entire egg until the yolk and white are combined and have uniform color. There should be no streaks of white or yolk, just a solid pale yellow. That’s all there is to it!
Overbeaten egg whites look lumpy and dull and form big white clumps if you try to fold them into another mixture. Beating whole eggs or egg yolks for chiffon and sponge cakes is even easier than beating egg whites. Since the egg yolks contain fat, they are almost impossible to overwhip.
1. The longer you mix the more fat distribution/protein coating occurs and consequently more protein weakening. 2. The longer mix time results in greater sugar dispersal and dissolving.
For big, fluffy scrambled eggs, try adding some club soda or baking soda. Add 1 tablespoon of club soda for every 2 eggs you’re cooking, or 1/8 teaspoon of baking soda for every 4 eggs you’re cooking. Just whisk it right into your egg mixture, and enjoy your soft and fluffy eggs!
