BTU stands for British Thermal Unit. That might sound technical, but all it really tells you is how much fuel it will use in a given period of time. So that means that a grill with a high BTU rating will use more fuel than one with a lower rating.
Anything between 80 and 100 BTUs per square inch is good enough.
The more BTU your unit produces, the more energy it consumes. So, if you are worried about high energy costs, you should get a unit that is appropriate for your space.
